Sourdough Discard
If you are keeping starter for your sourdough bread baking you are probably familiar with discard. Caring for the sourdough starter can seem very intimidating. Here is a great comprehensive guide for caring for your sourdough starter.
But once you get the hang of it, you’ll find yourself with plenty of starter for baking.
And soon you’ll be asking yourself “What am I going to do with all this discard?” Before you know it you’ll be making banana muffins, pancakes, waffles, crackers and more – all with discard!
Equipment Needed
Most likely you have these items in your kitchen already, but you can check out my favorites below!
Ingredients for Sourdough Brownies
- 1 Stick Butter (8 Tablespoons)
- 1 Cup Chocolate Chips
- 3/4 Cup of Flour
- 1 1/4 Cup of Sugar
- 1/2 Cup of Cocoa Powder (I love using Dutch Cocoa Powder)
- 1/2 teaspoon Salt
- 2 Eggs
- 1/2 Cup of Sourdough Discard
Making Sourdough Brownies
First, preheat the oven to 350 and line a 9 x 9 baking pan with parchment paper. I’ve tried to just use butter or a cooking spray to grease the pan without much success. Parchment paper works every time! And you can reuse your parchment paper for future batches of brownies.
In a large bowl mix the dry ingredients: flour, sugar, Cocoa powder, and salt. Stir to combine.
In a medium saucepan using low/medium heat, melt the stick of butter. Once the butter is melted remove from heat and add the chocolate chips. Use the spatula to stir until chocolate chips are melted.
Pour the melted chocolate butter mixture into the dry ingredients.
Next, add the eggs and the sourdough discard.
Using the spatula stir well until there are no more clumps. The batter will be very thick.
Pour the batter into the 9 x 9 baking pan. Spread the batter out evenly in the 9 x 9 baking pan.
Bake for 40 minutes or until a toothpick comes out clean and the middle is set. That is unless you prefer a softer, fudgy-er middle.
Allow the brownies to cool completely before slicing and serving. This will help the tangy sweet flavors fully develop. It will also make slicing so much easier.

Storing Sourdough Brownies
No need to discuss this too much- these brownies will go fast!
Any leftover brownies can be stored in any air tight container on the counter or in the fridge for a week. No way these brownies are going to last a week!
