This simple strawberry pie is the perfect addition to any summer time meal! Using fresh strawberries makes it a great summer treat!

Fresh strawberries are the sign that summer is on its way. And come to think of it. I don’t think I’ve ever met anyone who didn’t like strawberries. So making just about anything with strawberries in it, is sure to be a hit!
Now that we planted strawberries in a plastic basket, all I can think about is STRAWBERRIES! I love making strawberry jam, strawberry cake, strawberry muffins, strawberry ice cream, and strawberry pie!
How to Pick the Best Strawberries
If you don’t have your own strawberry plants, or maybe they’re just not producing yet, you can most likely find them at the grocery store.
Strawberries at the grocery store are usually bigger than homegrown strawberries. But bigger is not always better. In my experience, the best way to pick strawberries at the grocery store is with your nose. If the strawberries smell like sweet strawberries, then they’ll taste like strawberries. If the strawberries smell like nothing, then they’ll taste like nothing.
So look for a container of beautiful, red strawberries, but don’t forget the sniff test.

If you do find yourself with some strawberries that don’t have that sweet strawberry smell, you can add a little sugar to them. The sugar will sweeten them up a bit. But honestly it’s just hard to duplicate that fresh strawberry flavor.
Recipes From Nana
This is a recipe my Nana used for making strawberry pie. It is one of the many recipes she passed to me. My Nana was a great cook. I’m thankful to have so many of her recipes. I’m also thankful that she mostly cooked with easy to find, simple ingredients.
Ingredients For Simple Fresh Strawberry Pie

Here’s what you’ll need:
- 1 pint of strawberries
- 6 oz package of strawberry Jello
- 1 cup of sugar
- 2 tablespoons of cornstarch
- 1 graham cracker crust pie shell
- cool whip
Directions For Simple Strawberry Pie

First, rinse the strawberries. Then cap them. Capping strawberries means cutting off the green leaves. They make a tool to use when you cap strawberries, but I just use a knife.
As a side note, those strawberry caps will make wonderful treats for your backyard chickens. This way you don’t waste any part of the strawberry, your chickens will be happier, and their eggs will taste richer.
Next, mix all of the dry ingredients (Jello, sugar, corn starch) in a saucepan.

Next, add 1 cup of hot water, then 1 cup of warm water. Not really sure why the hot water, then the warm. But it’s Nana’s recipe- I don’t question it!

Cook over low heat until all the dry ingredients have dissolved. This should take less than 5 minutes.
Cool the Jello mixture. This may take around 30 minutes.
Place the strawberries in the pie shell. Pour cooled Jello mixture on top.

Chill in the refrigerator for about 2 hours. Jello mixture should be set.

Serve with cool whip

Tips for Making Simple Fresh Strawberry Pie
Piping cool whip (or icing) can seem a little daunting if you’ve never tried it. I don’t have an actual piping bag or piping tips. I think a plastic sandwich bag works just fine. The end result may not be professional, but this pie isn’t going to last long anyway!
Just fill the sandwich bag with cool whip and seal it. Then cut a small hole in one of the bottom corners. Remember it’s better to cut a smaller hole first. You can always make the hole larger if needed. Gently squeeze the cool whip out of the sandwich bag. With a little practice, you’ll be surprised at your new learned piping skills!

When getting the strawberries ready, there’s a couple of things to consider.
If you leave the strawberries whole, the pie will look much prettier. But the pie may be a little harder to eat if the strawberries are bigger than bite sized.
If you cut the strawberries into bite sized pieces, the pie will be easier to eat. But the cut strawberries will break down quicker, and the pie won’t last as long. This pie is seriously so delicious it won’t last long either way!
Variations For Simple Fresh Strawberry Pie
Try mixing in other berries. Using additional berries will add extra color and flavor to your pie.

- blueberries
- blackberries
