Tacos, burritos, nachos, and quesadillas are all popular foods at our house. They are typically easy to assemble and include common ingredients that are easy to find.
Weeknights can get really hectic around here! Balancing everything and preparing supper can sometimes seem a little overwhelming. That’s why I love having easy, family favorite recipes. A recipe for supper that I know everyone will like, and if there are leftovers they can easily be reheated for the next day’s lunch. Supper tonight and lunch for tomorrow; seems like a win win!
Sneaking in Extra Veggies
This easy taco casserole is also a great way to sneak in a couple of extra veggies! Getting kids (and a somewhat picky husband) to eat enough veggies can sometimes be a struggle. This taco casserole includes radishes and tomatoes.
Radishes are considered a super food, and they are an excellent source of vitamins and nutrients. Radishes are full of antioxidants and minerals. They provide calcium, vitamin C, and potasium. Radishes help boost the immune system and can help lower blood pressure. One great thing about cooked radishes is that they provide the same nutritional benefits but without the sharp bite radishes are known for.
But getting kids to eat them is a typically a different story. My kiddos, like many others I’m sure, are often hesitant to try new foods. However, incorporating them in a well loved food, like tacos, is a good way to introduce them. My advice is to be sure to dice the radishes up really small, about the same size as you would the onions, so that way they textural difference will be harder to detect. By cooking them with the ground beef and onions the radishes will tender up nicely.
Also, adding tomatoes instead of just water when you add the taco seasoning is another great way to sneak in one more veggie. The tomatoes will add more flavor to your dish than just water, and they add a few more antioxidants and vitamins. I love being able to use home grown tomatoes from my garden that I have canned. But when that’s not an option, canned tomatoes from the grocery store work nicely too!
Tips for Easy Taco Casserole
- Cut up the radishes and onions first. If your family is picky, dice them up really small!
- Heat up your pan before adding the ground beef, onions, and radishes. You will know the pan is ready if you add a few drops of water and the droplets immediately sizzle. It sort of sounds like applause!
- If you are using canned diced tomatoes in the recipe like I do, don’t follow the directions on the back of the taco seasoning packet. The taco seasoning packet will tell you to add water. There is enough juice in the canned tomatoes for you to skip the water altogether.
Variations for Easy Taco Casserole
- To make this recipe low carb, you can use low carb tortillas instead of the regular ones.
- Add a layer of black beans or refried beans. Add the layer of beans on top of the meat and under the cheese when assembling the casserole.
- For a spicier flare, you can add some salsa or your favorite diced hot peppers in with the meat once the meat is sizzling.

- sour cream
- salsa
- guacamole
- green onions
- shredded cheese
- diced tomatoes
- shredded lettuce
- hot sauce
- avacado slices
Ingredients for Easy Taco Casserole
Here’s what you’ll need:
- 1 lb of ground beef
- Small onion diced
- 1 cup of diced radishes
- packet of taco seasoning
- 15 oz can of diced tomatoes with juice
- 3- 8in flour tortillas
- shredded cheese
- whatever toppings you like
Directions for Easy Taco Casserole
Preheat oven to 350 degrees.
Brown the ground beef with the diced onions and radishes over medium high heat and drain.
Add the taco seasoning and diced tomatoes with juice and mix well.
Next, turn the heat to high just until the liquid begins to boil, then quickly turn the heat to low. Simmer for about 5 minutes. Simmering will help the meat stay tender and the sauce thicken. It also helps intensify the flavors.
Use cooking spray to grease an 8 inch round cake pan.
Put one tortilla in the bottom of the greased pan.
Then add 1/3 of the meat.
Sprinkle shredded cheese on top.
Repeat the layers (tortilla, meat, cheese) two more times.
Finally, bake uncovered for about 20 minutes or until cheese is nicely melted and the edges of the tortillas begin to lightly brown.
Cut like a pizza.
Top with your favorite toppings and enjoy!
As I finish typing this recipe, Buddy is looking over my shoulder at the laptop reading what I’ve typed. Suddenly he says “Wait! There were radishes in tonight’s supper?”
He completely finished his serving of easy taco casserole with radishes without even knowing about the extra veggies. Score one for mom.

Great use of the radish. I have recently become a fan of the radish and they have not disappointed me yet. This recipe looks good and I will definitely give it a try. I also use canned tomatoes in my taco meat recipe and I will sometimes throw in a can of Rotel for a little different flavor.
